As you said,Fiorentina is a bit different,however,I have a good suggestion for your next recipe: avoid feta cheese and have some ricotta (quark cheese).
Put it into a bowl,and add a teaspoon of olive paste (or olive patè) and a pich of oreganum.
Stir well for a while and have a wondeful and amazing bruschetta !
