    Howdy folks…

    Heres Sundays Dinner :

    -Moink Balls, seasoned with Dizzy Pig coarse BBQ Rub and later basted with Roadhouse BBQ Sauce mixed with Jim Beam, Tabasco and Honey.
    Had to try those after seeing them so many times over the last couple of days and they rock bigtime !

    -Chicken Wings rubbed with Dizzy Pig Jamaican Firewalk

    -a small pork belly roast with Texasbbqrub

    Cooked it all on the egg at 325-350 F with some cherry chunks.

    Beats the chit out of the Pizzas my neighbours ordered 😈

    Ouch Don Marco…snowy and cold wheather has already knocked at you door,isn’it ?! %)
    Same for us,who are living in northern part of Italy…no snow…but chill wind,like a sharpened knive on your face.
    Apart from that,wonderful Sunday’s meal…indeed !
    Have a couple of questions for you:
    1) Moink Balls, seasoned with Dizzy Pig coarse BBQ Rub :could you please explain to us the indredients and how did you cook them ?
    2) Did you cook with cold cold weather conditions outside,thought…
    how was your total cooking time,in general ?
    3) Beverages ? (-:/

    Hi Carlo

    Moink Balls habe their name from the main ingredients : Mooooh for the ground beef and Oink for the bacon from the pig :mrgreen:

    You can season your beef any way you like, i just used the dizzy pig commercial rub for them. Mix it up good, toll into balls and wrap with bacon. Secure the Bacon with a toothpick and put on the grill over indirect heat of ~160 C until the bacon crisps up.
    Then baste with the BBQ Sauce until thickened. Takes a bit more than an hour overall, is very easy and extremely good eats.

    Cold weather cooking is absolutely no problem with my big green eggs and the primo oval. The ceramic holds heat very well and is not affected by wind or rain.

    I wish i could drink a nice beer to that but i´m sick and on medication so its just plain water for me this week %)

    Ok,let’s have a quick recap:
    1) Minced beef,seasoned at the way I like,
    2) Wrapping the balls with bacon or even Bauchspeck (smoked pancetta),
    3) Basting with BBQ sauce,correct ?

    Ta so much for your reply !
    Unfortunately,I dind’ try them yet,but it was a great suggestion to be kept in mind for the future.
    You know,Christmas is knocking at the door,and we Italians,are approaching the forthcoming recipes for this new Season’s greetings !
